Beans. Oh beans. I have a love/hate relationship with beans. I LOVE to eat them. Like any time, anywhere, with anything, I love to eat beans, of all shapes and colors. What I HATE is how fast my body digests them! Hahaha which is totally a normal thing. Beans are so very good for us, and I can’t keep enough in my house! My sister in law and wonderful friend, orders beans by the poundS. And by poundS I mean she text me one day saying she was just delivered over 100 pounds of beans. That’s a lot of beans…funny thing is she’s almost thru it 😉 We eat rice and beans about 3-4 nights a week for dinner, at least that’s what I meal plan for. Beans are super cheap. Beans are full of fiber and are a huge cancer fighting food. They are high in antioxidants, protein, B vitamins, iron, magnesium, potassium copper and zinc. The benefits of beans for our overall health are amazing. Eating beans regularly can decrease your risk of diabetes, heart disease, colorectal cancer and helps with weight management. But a lot of people don’t like beans, and I can understand that. If not cooked properly they can be pretty bland. They don’t have the most inviting smell either.
